I made this special batch of cupcakes in honor of my little brothers 26th birthday. These cupcakes are actually quite a bit like him - fun, bright and sure to put a smile on just about anyone's face. Growing up together my little brother was always a fan of an ice cream flavor called "Super Kid" (which also describes him pretty well) which was made up of sherberts in every color of the rainbow. That ice cream, and my brothers forever young persona, were my inspiration for these colorful and whimsical birthday cupcakes.

How-To
1. Mix up a batch of your favorite cupcake batter. We made a half batch of Martha's classic Vanilla Cupcakes. Divide your batter into four separate bowls. Add several drops of food coloring to each bowl - we used the standard red, yellow, green and blue. Mix each batch of batter well until smooth consistent color is achieved.
2. Line muffin tin with cupcake liners. Add about a tablespoon of colored batter layered with another color..and another..and then another. Bake.
3. While your cupcakes are cooling prepare the icing. I whipped up a batch of my favorite Vanilla Buttercream Frosting. Add frosting to cooled cupcakes and sprinkle with rainbow colored sprinkles.
