Peanut Butter Sandwich Cookies

Oh. Em. Gee. These cookies are AH-MAZING. If you love peanut butter (and we sure do in this house) then delight your family by whipping up a batch of these soft chewy peanut butter sandwich cookies. Guaranteed to make for some happy faces.

Peanut Butter Sandwich Cookies

The Cookies - ( my all time FAVE PB cookie recipe by Anna Olson of Sugar)
1/2 cup unsalted butter at room temperature
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 egg
1 tsp. vanilla
1/2 cup peanut butter (smooth or crunchy)
1 1/2 cups all purpose flour
1 tsp. baking soda
1/4 tsp. salt

The Filling -
3 cups icing sugar
1 tsp. vanilla extract
5 tbsp. milk
1/2 cup smooth peanut butter

Directions -
1. Cookies First. Preheat oven to 350. Cream together butter and sugars until pale and fluffy. Beat in egg and vanilla. Stir in peanut butter.

2. In a separate bowl combine flour, baking soda and salt. Add to peanut butter mixture and blend in.

3. Drop by tablespoonfuls onto an ungreased cookie sheet and crisscross mark them with a floured fork. Bake for 8-10 minutes.

4. While cookies are baking prepare your filling by mixing all of the required ingredients together until smooth and creamy. Once cookies have cooled spread filling onto one cookie and top with another to make a "sandwich".

I will have to try these because I absolutely LOVE peanut butter. They look super yummy.

Yum! We made these as soon as we saw them - it sounded like quite a bit of filling though, so we only made a half batch and still had some left over! It was SO yummy, thank you!
