Roasted Corn & Stuffed Chicken Breasts

Being a vegetarian I don't prepare a whole lot of meat but my other half does appreciate when I occasionally prepare something for him that has a little more substance (the man is not a fan of what he dubs "pretend meat" and not so fond of the tofu either). I love this recipe for mozzarella stuffed chicken breasts because it's easy and always impresses my company. I served it with some oven roasted corn on the cob as it's one of those things I can never seem to get enough of. My dinner consisted solely of a plate piled high with juicy buttered roasted corn...mmmmmmm.
