Shooting Stars Parfait

We whipped up a batch of these delightful and delicious Shooting Star Parfaits for an extra special dessert tonight. This treat is just as yummy to eat as it is to look at, plus is super simple and speedy to put together..try making up a batch of these for your little stars.

Ingredients -
1 pkg Berry-Blue Jello
1 cup boiling water
2 cups ice cubes
1-2 cups thawed Cool Whip
4 large marshmallows
Colored sugar (we make our own by mixing some food coloring into some fine sugar)

Directions -
1. Add boiling water to Jello and stir until completely dissolved. Add ice cubes. Stir until Jello thickens, 3-5 minutes. Remove any remaining ice cubes. Refrigerate Jello for 10-20 minutes, no longer, until the Jello has a thicker consistency but is not completely set. This ensures the Cool Whip does not float to the surface when you are forming your clouds in the next step.

2. Alternate spooning thickened Jello and spoonfuls of Cool Whip into large parfait glasses. Refrigerate at least another 15 minutes.

3. Flatten marshmallows slightly with a rolling pin and cut into star shapes (we did not have a small enough cutter so I cut our stars by hand). Moisten stars slightly with water and sprinkle with colored sugar.

4. Top finished parfaits with a dollop of additional Cool Whip and marshmallow stars.
