My family adores this hearty tuna casserole and I love it most of all because it's easy to put together (even on the busiest of evenings).
Tuna Penne Bake
2 1/2 cups uncooked penne (or try mini shells or rotini)
1 cup frozen peas
1 can cream of celery soup
2/3 cup milk
1 can flaked tuna, drained
2 tbsp whole grain Dijon mustard
3/4 cup cheddar cheese
1 onion, chopped
1/4-1/2 cup mushrooms, chopped
Cracked black pepper
1. Cook penne. Add peas during last 5 minutes of cooking time. Drain and set aside.
2. Combine in a baking dish: soup, milk, tuna, mustard and 1/2 cup of the cheese. Gently stir in the pasta with peas, onions and mushrooms. Top with remaining cheese. Sprinkle with pepper.
3. Bake at 400 for 30 minutes.
