Snow Ice Cream

We put a Valentines Day spin on this fun homemade snow ice cream or as my oldest calls it - snowman soup. All you need is a yard full of fresh snow, a few common ingredients from your kitchen and some eager kiddos. I found this ice cream has the consistency of soft serve...with the odd crunchy piece if you're lucky enough to scoop a little ice up with your snow. This ice cream does not keep well though so eat what you've made in one sitting and consider making a half batch for a smaller group of taste tasters.

Snow Ice Cream (adapted from this recipe from Almost UnSchoolers)

What You'll Need
  • Lots of Snow (about 10-12 cups worth)
  • 1/2 cup sugar
  • 1 tbsp. vanilla
  • 1 tbsp. vanilla pudding mix
  • 1 cup cream

Directions

1. Mix the cream, sugar, vanilla, pudding mix and vanilla extract together. Add 5 cups of snow. Do not pack the snow down..you want it to be nice and fluffy. Stir, cover with plastic wrap and leave outside for 12-20 minutes.
2. Add 6 cups of snow to the chilled mixture and stir well. Add more snow if needed. All in all we ended up using about 11-12 cups of snow. Whatever floats your boat. :)
